Chili Your Way
I love making this chili. It is easy, tasty, and using any vegetables you have on hand makes it a perfect last-minute meal.

Cook Time 40 minutes
Total Time 1 hour
Servings 4
Ingredients
- 1 Onion diced
- 3 Garlic cloves minced
- 2 Carrots diced
- 1 Bell Pepper diced
- 1 Cauliflower stemmed and cut into small pieces
- 2 TBS Chili Powder or to taste
- 2 tsp Cumin
- 1 TBS Vinegar apple cider, rice, wine
- 1 Can Tomatoes crushed (15oz)
- 1 Can Tomatoes diced (15oz)
- 1 1/4 C Water
- 2 Cups Kidney Beans cooked
- 1 lb Cooked shredded beef or ground beef chicken, or turkey (if making non vegan variety)
- 1 handful Cilantro for garnish
- 1 Avocado for garnish sliced
- dollop Sour Cream or Vegan Sour Cream for garnish
Instructions

In Dutch oven or large pot, saute onions until transluscent.

Add garlic, saute for 30 seconds

Deglaze pan with about 1/4 cup water.

Add carrtos, cook until soft, about 5 minutes.

Add bell pepper and cauliflower, cook until soft, about 5 minutes.

Add spices, vinegar, tomatoes, kidney beans and 1 cup of water.

Add cooked meat at this point if making non vegan variety.

Bring to boil, then reduce heat and simmer for approximately 40 minutes.

Stir occasionally and taste. Add salt, pepper and additional spices if needed.

Garnish with cilantro, sour cream or avocadoes.
