Quick & Healthy Salad

This salad has all the ingredients necessary to eat as an entree. It is filled with lots of antioxidants, protein, and healthy fats. The great thing about this salad is you can mix and match, and change up ingredients to suit your taste!

Servings 4

Ingredients

Salad:

  • 1 bunch Salad greens such as baby kale spinach, arugula, romaine (any greens will do)
  • 1/2 Cup Cabbage red or green
  • 2 Chopped Carrots. Add some variety; try different color heirloom carrots
  • 1/2 Chopped Cucumber
  • 1 Chopped Avocado
  • 1/2 Cup garbanzo beans
  • Experiment by adding any other vegetables you have on hand

Dressing:

  • 1/4 Cup Olive oil
  • 1/4 Cup Balsamic Vinegar
  • 1 Tbsp Dijon mustard
  • 2-3 Tbsp Maple syrup
  • 1 tsp ground oregano

Instructions

  1. Chop all vegetables.
  2. Toss salad ingredients into large bowl.

Recipe Notes

Mix dressing ingredients in shaker or blender or top with any dressing of your choice. Homemade dressings are always a good choice. You control the ingredients and the cost! Pour desired amount of dressing over salad. Garnish with parsley and nuts.
